Siumai with Cucumber Salad in Sichuan Style Dressing

A refreshing mix of textures and flavours, offering a cooling bite followed by a subtle kick of heat, perfect alongside Pork, Prawn and Shiitake Siumai.

INGREDIENTS

HOW TO MAKE THE SALAD

  1. Put all the ingredients (except the cucumber) into a large bowl and stir well.
  2. Add the cucumber slices and mix well until coated with the dressing.

HOW TO MAKE THE DIPPING SAUCE

  1. 2 tbsp light soy sauce
  2. 1 tbsp rice vinegar (or balsamic vinegar)
  3. ½ tbsp chilli oil (optional, for an extra kick)

HOW TO MAKE THE SIUMAI

Serve with Pork, Prawn & Shiitake Siumai (steamed as per the cooking instructions). Enjoy!

  1. Line a steamer (or a colander/sieve) with baking paper and place over a pan of boiling water on medium heat.
  2. Add the dumplings and cover with a lid. Steam for 8 minutes. Enjoy!
