Jiaozi with Egg Fried Rice

INGREDIENTS
HOW TO MAKE THE FRIED RICE
Warm the oil in a heated pan. Add garlic, ginger, peas, and spring onions, and stir fry for a few minutes over medium heat.
Add the cooked rice and heat through thoroughly for about 5 minutes.
Make a hole in the centre of the rice and add the beaten eggs.
Stir-fry for a few minutes, mixing well, until the rice is evenly coated with egg.
Season with ground white pepper and salt to taste.
Lastly, add sesame oil to the fried rice and give it a final stir.
Garnish with spring onions.
HOW TO MAKE THE DIPPING SAUCE
2 tbsp light soy sauce
1 tbsp rice vinegar (or balsamic vinegar)
1/2 tbsp chilli oil (optional, for an extra kick)
HOW TO MAKE THE MANDU
Serve with Vegetable Jiaozi (steamed as per the cooking instructions). Enjoy!
Line a steamer (or a colander/sieve) with baking paper and place over a pan of boiling water on medium heat.
Add the dumplings and cover with a lid. Steam for 6 minutes. Enjoy!
