Where are dumplings from?

The origin of dumplings is still debated, but they were already popular in the Far East as early as the 2nd century. As they travelled west along the Silk Road, the humble dumpling was adapted and transformed by many different cultures. Today, dumplings are enjoyed in an incredible variety of tastes and styles, each one reflecting the unique character of the people and places that created them.

Each dumpling has its own legend.

Chicken and Kimchi Mandu

The making and recipe of the Mandu has been passed down through generations of Korean families. Legend has it that this popular Korean food cannot be made well without the love in a mother’s hands.

Mandu is the name for the family of dumplings in Korean cuisine and can comprise a huge range of different types and preparation methods; they’re a very thin wheat wrapper filled with various ingredients such as meat, shrimp, vegetables, and kimchi. Our mandu contains chicken and is combined with kimchi.

Korean BBQ Beef Mandu

The origin of dumplings is still debated, but they were already popular in the Far East as early as the second century. Today, dumplings are enjoyed in an incredible variety of tastes and styles, each one reflecting the unique character of the people and places that created them.

Legend has it that one thousand years ago Korean soldiers would grill meat over fire on their shield to stay warm, known as “Snow Night Meokjeok”. These days, this smoky flavour of Bulgogi beef is embraced worldwide and is a much-loved dish in Korean homes.

Prawn Hargow

Legend has it that these crystal prawn dumplings were created by the owner of a teahouse along the banks of the Pearl River. He purchased fresh fish from passing fishermen for the ultimate fresh dim sum.

Hargow is a delicate translucent dumpling with a tapioca wrapper containing shrimp and bamboo shoots. The name ‘Hargow’ in Cantonese also means ‘wedding gown’, as the shape of a dumpling resembles the traditional gown worn by a bride on her wedding day. Our Love Sum Prawn Hargow is filled with prawns, bamboo shoots and water chestnuts.

Vegetarian Jiaozi

Legend has it that Jiaozi resemble gold ingots and therefore represent prosperity. Often made for Chinese New Year festivities, a coin is hidden in just one Jiaozi. The lucky person finding it is blessed with good fortune for the year ahead.

Jiaozi typically consists of a thinly rolled wheat wrapper, filled with a ground meat and/or vegetable filling; fillings vary with the vast regional influencers and ingredients available – from fish and shrimp in the coastal regions to lamb and pork in the landlocked provinces. Taking inspiration from tradition, we have created a vegetarian dumpling filled with plant-based mince, cabbage, and spring onion.

Chana Paneer Momos

Legend has it that Newar merchants visiting India bought with them the Newari dish Momo Cha. Over time the traditionally meat-filled parcel was adapted using paneer for the large vegetarian Hindu population of India.

A traditional Momo contains yak, lamb, or mutton, and is typically shaped round or like a half moon. Nowadays they are popular across India and we have brought you one similar to what you might find in Mumbai, where paneer and chickpeas is a popular combination.

Lamb Masala Momos

Legend has it the Momo was introduced into Tibet by a beautiful Nepalese Newari princess, who was married to a Tibetan King in the late fifteenth century. The Momos reminded her of home.

A traditional Momo is a simple white flour wrapper filled with yak, lamb, or mutton, though nowadays you can find Momos with other meat-based and vegetarian fillings, and even cheese. Following tradition, we have created a minced lamb and vegetable-filled dumpling.

Pork, Prawn and Mushroom Siumai

Those who travelled the ancient Silk Road visited teahouses en route for dim sum appetisers and tea. Legend has it that the combination of the food with tea brings a sense of thoughtfulness and connection to the food.

Siumai, also known as shumai, varies from place to place regarding filling and the wrapper, but they are always characterised by being open at the top. The classic Cantonese style is filled with a typical 6:4 shrimp-to-pork ratio, along with mushroom, spring onion and ginger. Our Love Sum dumplings closely reflect this traditional Cantonese style, as they’re open and topped with a prawn.

Legend has it that Peking Duck was created as a dish for Chinese emperors to symbolise status. In modern times, immigrants from Hon Kong developed this dish into Hoisin Duck and with it, the spirit of ‘Chinatown’ and hospitality.

This Hoisin Duck Dumpling Squash Salad is a must-try this Spring! Full recipe below 🥟

Ingredients:

Five spiced squash:
Half Butternut Squash, peeled & cubed
Extra Virgin Olive Oil (EVOO)
1.5 tsp Chinese Five Spice
Sea Salt & Black Pepper
0.5 tbsp Honey

Dressing:
1 Garlic Clove, grated
Half Red Chilli, grated
Fresh Coriander Leaves, finely chopped
Half Lime, juiced
3 tbsp Soy Sauce
2 tbsp Rice Wine Vinegar
1 tbsp Fish Sauce
1 tbsp Sesame Oil
0.5 tbsp Honey

Salad:
Love Sum Hoisin Duck Dumplings
100g Watercress
Half Cucumber, ribboned
1 Carrot, ribboned
2 Spring Onions, thinly sliced
30g Peanuts
Crispy Shallots

Method:

Five spiced squash:
Preheat the oven to 200°C (fan).
On a roasting tray, massage the squash with EVOO, five-spice, sea salt, and black pepper. Spread out evenly. Roast for 50 minutes. Halfway through roasting, drizzle over honey, toss, and return to the oven until softened and golden.

Dressing:
Add all your dressing ingredients to a small jar. Shake well, taste, and adjust the seasoning accordingly.

Salad:
Heat a little oil in a pan. Pan-fry your Love Sum Hoisin Duck Dumplings until golden on the bottom. Add 30ml of water, place a lid on, and steam for 3 minutes, until the water has evaporated.
Assemble all of your salad ingredients in a large bowl.
Add the roasted squash and dumplings.
Drizzle over the dressing and toss! 🥗

You will need:



1 pack Love Sum Chicken & Kimchi Mandu

1 tsp oil

3 garlic cloves

1 tbsp gochujang/ chilli paste

500ml boiling water

2 tbsp soy sauce

1 pack medium noodles (approx 80g)

Handful of spinach leaves

Toppings (optional)

Grated mozzarella

Sesame seeds

Crispy onions

Boiled egg

Chilli oil



In a saucepan, fry the garlic & chilli paste with 1 tsp of oil. Add the boiling water, soy sauce and noodles and cook according to packet instructions. Add the spinach & dumplings, then cover & cook for 5 mins. Sprinkle over some grated cheese & your favourite toppings. Enjoy 🥟

We’re obsessed with this Korean BBQ Beef Mandu Dumpling recipe with gochujang-sesame asparagus & red pepper hummus, great for sharing with friends or family 🤩

INGREDIENTS


Hummus:

200g Chickpeas (plus 4 tbsp aquafaba)

1 Jarred Roasted Red Pepper

1 Garlic Clove

1 Lime, juiced

1 tbsp Tahini

0.5 tbsp EVOO

0.5 tbsp Sesame Oil

0.5 tsp Smoked Paprika


Asparagus:

1 tbsp Dark Soy Sauce

0.5 tbsp Honey

2 tsp Gochujang Paste

1 tsp Sesame Seeds

Extra Virgin Olive Oil (EVOO)

150g Asparagus Spears, woody ends removed & chopped

2 Spring Onions, thinly sliced (whites and greens separate)

2 Garlic Cloves, thinly sliced

METHOD


Hummus:

Blitz the ingredients together for a few minutes until smooth.


Asparagus:

In a small jar, combine soy sauce, gochujang, honey, sesame seeds, and 2 tbsp of water.

Heat EVOO over a medium-high heat. Stir-fry the asparagus for 3-4 minutes, stirring regularly and allowing it to char slightly.

Add the spring onions and garlic. Stir-fry for 2 minutes.

Pour over the sauce and allow it to bubble rapidly, coating the asparagus in the sticky glaze.


Dumplings:

Heat a little oil in a pan over a medium heat.

Pan-fry your Love Sum Korean BBQ Beef Mandu until golden on the bottom.

Add 30ml of water, place a lid on, and steam them for 3 minutes, until the water has evaporated 🥟

Elevate your Dumplings with this crispy potsticker recipe 🥟

Ingredients:
• 1 pack Love Sum Hoisin Duck Dumplings
• 1 tbsp oil
• Water
• 1 tbsp cornflour

Heat oil in a non-stick pan & place dumplings flat side down. Add 2 tbsp water, cover & cook for 4-5 minutes. Mix cornflour with 100ml water & pour into the pan. Cover & cook for 3 minutes on low-medium heat. Uncover & cook until the water evaporates & the base turns crispy and golden. Enjoy! 🥢

Recipe details:

• 1 pack Love Sum Prawn Hargow dumplings
• 3 garlic cloves, grated
• 2 tbsp tomato purée
• Red chilli, sliced
• 2 cups boiling water
• Half cup coconut milk
• 2 tbsp soy sauce
• 1 tsp brown sugar (optional)
• Pak choi
• 1 tbsp oil

Fry the grated garlic with the tomato purée + chilli. Once cooked, add the boiling water + coconut milk + mix well. Add the soy sauce, brown sugar, mix + add in the pak choi + Dumplings in the last 3-5 mins of cooking. Top with sesame seeds + chilli oil before serving. Enjoy 🥢✨
